One of my favorite summertime treats. Fresh Strawberries. Truly you can do anything with Strawberries and they will be DELICIOUS. Strawberries in Pie, Strawberries in Salad, Strawberries in cake, Strawberries in water, Strawberries in Cool Whip, Strawberries in Lemonade, Strawberries in Popsicles, Strawberries in Smoothies, Strawberries in Ice Cream, Strawberries in Omelets, Strawberries in Chocolate, Strawberries in homemade Jam, Strawberries dried, Strawberries fresh….Truly, strawberries do no wrong!

One of my favs:

Cheesecake Stuffed Strawberries

About 20 strawberries
8 oz pkg softened cream cheese
1/2 cup powdered sugar
1/2 tsp vanilla
1 sleeve of graham crackers
1/2 cup mini chocolate chips (optional–but seriously who does strawberries without chocolate!?)

First you will want to wash the strawberries and cut off the tops. Now core them (I use a paring knife). To make the filling, Beat the cream cheese. Add powdered sugar and vanilla. Beat until smooth. Then crush the graham crackers. Fill the cored strawberries using a piping bag (or a ziplock bag with the corner cut off!) and then dip the open end (where you just piped the filling in) in the graham cracker crumbs. Finally, melt about 1/2 cup of chocolate chips, pour in zip lock, snip the tip and DRIZZLE. Final product = Yum!


Cheesecake + Cupcakes!?

Cheesecake is one of my most favorite desserts EVER! So I made it into cupcakes. I literally mixed up a cheesecake (chocolate chip cheesecake to be exact) and poured it into cupcake tins. They baked really quickly! I added strawberries for a little extra touch and they turned out perfect!

I decided to keep up with the cheesecake theme so today I made chocolate cheesecake cupcakes. It was actually really easy and they turned out great as well!!

1 package (8 oz.) cream cheese, softened
1/3 c. sugar
1 egg
1/8 tsp. salt
1 c. chocolate chips

1 1/2 c. all-purpose flour
1 c. sugar
1/4 c. baking cocoa
1 tsp. baking soda
1/2 tsp. salt
1 c. water
1/3 c. vegetable oil
1 Tbs. white vinegar
1 tsp. vanilla

In a bowl, beat cream cheese. Add sugar, egg, salt. Mix well. Fold in chips. Set aside. For cupcakes, combine flour, sugar, cocoa, baking soda, and salt. Add water, oil, vinegar, and vanilla. Mix well. Fill paper-lined muffin cups half full with batter. Top each with 2 Tbs. of cream cheese mixture. Bake at 350ยบ for 25-30 minutes. Cool 10 minutes and remove from pan. Makes 18.
